Ingredients:
½ # Ground Beef
2 Qt. Chicken Stock
2 Qt. Beef Stock
2 C. Black Beans
10 oz. Andouille Sausage( Diced)
3 oz. Cumin
1 oz. Paprika
3 ea. Onion (Diced)
1 ea. Red Bell Pepper(Diced)
1 ea. Green Bell Pepper(Diced)
1 ea. Carrot(Diced)
1 oz. Thyme
1 oz. Parsley
3 oz. Tilapia(Diced)
3 oz. Yellowtail(Diced)
3 oz. Mahi Mahi(Diced)
Directions:
-In a Stock pot add the ground beef and saute until a golden brown, next add the vegetables, sausage and saute for approximately 5 min. Add the stock’s and black beans; cook and reduce by ¼. After the chili has reduced add the fish and cook an additional 5 to 8 min. add the remaining ingredients and season to taste. The chili should be thick but light in appearance.
