Ingredients:
4 Ea. Dover sole Fillet
1 tsp. Pepper
1 tsp. salt
2 ea. Airloom tomatoes
1 pc. Rosemary Sprig
1 pc. Thyme Sprig
1 pc. Fennel Stalk
2 oz. olive oil
2 oz. butter
1 oz. Mozzarella
2 pc. Lemon Rounds
1 ea. Parchment paper
Directions:
-first line the parchment paper with the butter and place the lemons in the middle and the herbs after that add the airloom tomatoes then add the Dover Sole, season heavily then add the mozzarella and drizzle with the olive oil. Fold over the parchment paper and make sure it is securely closed and place into a preheated oven at 350 degrees for apprx. 10 to 15 min.
