Notice my new Old Bay Avatar (see pic to left)??? Ooh la la!
To celebrate, I grabbed an Old Bay Recipe from the good people at McCormick. It's really late here... almost midnight... but I am absolutely craving this! The combination of Catfish and Old Bay just seems like a great fit - I'll be trying this in the very near future:
Ingredients
1/3 cup cornmeal
1 tablespoon OLD BAY® Seasoning
1 teaspoon McCormick® Parsley Flakes
1/4 teaspoon McCormick® Garlic Salt
1 pound catfish* fillets
1 egg
3 tablespoons vegetable oil
Directions
1. Mix cornmeal, Old Bay, parsley and garlic salt in shallow dish. . 2. Dip fish fillets, 1 at a time, in beaten egg. Allow excess egg to drip off. Coat with cornmeal mixture.
3. Heat oil in large skillet on medium heat. Panfry fillets 4 to 5 minutes on each side or until fish flakes easily with fork.

Yum, Yum, your avatar, comments and recipes has brought to my mouth the evocation of Old Bay seasoning... cravings are contagious so I simply have to try it!

I first encountered Old Bay a few years back when a friend made crab cakes using the seasoning. Every since then, Old Bay has a place in my kitchen. I use it routinely to spice up salmon patties.

Hi that is one great recipe. When I fried fish I used 1 to 1/2 cup cornmeal.
per one pound fish. I used a vegetables oil to fried my fry. I use old bay seasoning all the time. I used old bay seasoning in frying chicken one time. It was good.
