Easy, delicious, one-bowl cupcakes, perfect for a special Valentine's dessert. Just mix and pour. Take a minute to frost with pretty hearts, and this is one fabulous dessert!
* 2 1/4 Cups flour
* 1 3/4 Cups sugar
* 1/2 tsp. baking powder
* 1 3/4 tsp. baking soda
* 1 tsp. salt
* 2/3 Cup COCOA (we prefer NATURAL)
* 2/3 Cup butter
* 1 Cup water, divided
* 3 eggs
* 1 tsp. PURE VANILLA EXTRACT
Frosting:
* 2 Cups powdered sugar
* 4 TB. butter, room temperature
* 4 TB. milk
* 1/2 tsp. PURE VANILLA EXTRACT
Preheat oven to 325°. In a large mixing bowl, sift flour with sugar, baking powder, baking soda, salt and COCOA. It is important to always sift COCOA to break up any lumps. Add 2/3 Cup room temperature butter and 2/3 Cup water, mix for 2 minutes on medium mixer speed (or beat vigorously by hand). Add 1/3 Cup water, 3 eggs and PURE VANILLA EXTRACT. Beat 2 more minutes. Line cupcake tins with paper liners and fill 2/3 full with batter. Bake for 15 minutes and leave to cool on a rack for about 20-30 minutes before frosting. Prepare the frosting by mixing powdered sugar, room temperature butter, milk and PURE VANILLA EXTRACT in a small bowl by hand. If the frosting is too thin, add more powdered sugar. If it is too thick, drizzle in more milk. If desired, add a bit of red food coloring to the frosting or make a small bit of pink frosting and decorate the tops.
