Ingredients:
1 # diver scallops (cleaned & diced)
4 oz. butter
3 c. crumble croutons
2 oz. parsley (chopped)
1 oz. garlic (minced)
2 oz. shallots( Minced)
2 tbsp. balsamic
3 ea. Eggs
2 oz. black pepper
3 oz. salt
Directions:
-In a medium size mixing bowl add all the ingredients and mix well until evenly incorporated, slowly pick up about a hand full and start pressing it between your palms until you make a firm oblique patty. After they have all been form slowly sear them on a flat top, after they are seared put them into a 350 degree oven for approximately 10 min. or until they are firm to the touch. Can be served with tartar sauce.
