Default Mediterranean Mushroom Hummus

2 cups of mushrooms (your choice all are good)
1 tablespoon of olive oil,
salt and pepper to taste
1 teaspoon about a sprinkle of paprika


1 can of Chick peas drained with the liquid reserved aside.
4 Tablespoons of the chick pea liquid.
2 tablespoons of Tehina or Sesame paste (same thing)
Juice from 1/2 lemon
1 small garlic clove
4 tablespoons olive oil
1 tablespoon parsely
salt and peper to taste


Cut the mushrooms to bite size slices (about 1/4 inch thick) and saute them in the olive oil,
after they are half cooked salt and papper them, continue cooking until they are soft but still juicy and there is liquid in the pan, (but not too much just moiste and juicy)


In food processor, put chick peas, 4 tbl liquid, 4 tablespoons of olive oil, tehina, lemon juice, garlic, parsely,salt and pepper and blend until smooth. Taste and adjust season as you like, more lemon or garlic, but remember the garlic will become a little bit stronger in about an hour. The consistancy should be that of mashed potatoes, so if it's dry add more of the reserved liquid from the chick peas a little at a time.

spread Hummus on a plate and make a well in the center with a spoon, top with your mushrooms warm or cold, sprinkle with one tablespoon of olive oil and paprika, (this looks real nice as a display for parties)

Serve with one or all: pita triangles, french bread slices, veggitable crudites, cocktail shrimp, crackers or even potatoe wedges baked or fried. you can find new things to serve hummus with it's a fabulous dish that everyone loves.

I am adding this one to my list of TO DO recipes. Actually this one will go to the top of the list I think. I'm going shopping today so I will get the ingredients for it.

Bought the ingredients....just got to get around to making it now. Will let you know how it goes.
